Juicy tomatoes filled with a herby parmesan-and-mince stuffing and topped with melting cheese — baked to bubbling in the BRUNO Compact Glass Air Fryer. A colourful, low-effort dish that works as a starter or light main.
Ingredients
- 3 small tomatoes (250g)
- Filling: 100g beef and pork mince
- 1 egg yolk
- 3 tbsp grated parmesan
- 5 basil leaves
- ¼ tsp grated nutmeg
- Salt and pepper, to taste
- Shredded melting cheese, to top
- Chopped parsley and basil, to garnish
Method
- Finely chop the basil and parsley. Slice the tops off the tomatoes and scoop out the insides (keep the tops as lids). Remove the hard core and put the flesh in a bowl.
- Add the filling ingredients to the tomato flesh and mix until it becomes slightly sticky.
- Spoon the filling back into the hollowed tomatoes and top each with shredded cheese.
- Arrange the tomatoes (with their lids) in the glass basket and set into the unit. Select the “Vegetables” menu (180°C / 18 min) and press start.
- Lift out the basket, plate the tomatoes, scatter over parsley and finish with basil.
Tip. Use firm, evenly sized tomatoes so they hold their shape while baking.
