How to Choose a Japanese Bread Maker

A bread maker earns its worktop space by removing every fiddly step: it kneads, proves and bakes on its own, and a timer means the loaf is ready when you come downstairs. The two Japanese makers worth knowing take slightly different routes to the same loaf.

1. How much bread do you actually want?

All the machines here bake a household loaf, but they are not the same size on the counter:

  • Compact — the Zojirushi Home Bakery Mini bakes a 1 lb loaf and is the slimmest of the four. Best if worktop space is tight and you bake a loaf at a time.
  • Full size — the larger Home Bakery and the Panasonic SD models take up more room but add courses, dispensers and finer control.

A 1 lb loaf, or roughly 300g of flour, suits one to three people. Bread machines are built to bake fresh rather than to bake ahead, so size for a day, not a week.

2. Zojirushi Home Bakery or Panasonic SD?

Zojirushi Home Bakery machines run an English control panel and come with an English manual and recipe booklet, so nothing needs translating. The larger model adds an Auto Add Dispenser that drops in nuts and dried fruit at the right moment, and a HOMEMADE course that lets you set the knead, rise and bake times yourself — unusual on a domestic machine.

Panasonic SD machines lead on the mechanics: an inverter motor varies kneading speed to imitate hand-kneading, and a far-infrared, fluorine-coated pan spreads heat more evenly. Separate automatic dispensers handle the yeast and the fruit, and the course lists run to 29 and 35 programmes covering pizza dough, udon, mochi, jam and more.

3. Set up in the UK

Choose Panasonic SD if you want the widest course list (29 or 35 programmes) plus an inverter motor and separate automatic yeast and fruit dispensers. Both bake a household loaf; the difference is control panel language and how much the machine does for you.

Some Panasonic models use a Traditional Chinese panel with an English and Traditional Chinese manual — programmes are selected by number, so day-to-day use does not require reading Chinese. Yes. Most models let you set the time at which baking finishes, up to 13 hours ahead, in 10-minute steps. Load the ingredients before bed and the loaf is ready in the morning.
